Every year, Schooner team members throw a Mardi Gras parade for residents, for which each department creates its own miniature float. Before the parade and fun, our culinary team spoiled us with a holiday-inspired buffet: Creole beef strip sirloin, fried oysters with remoulade sauce, shrimp sliders po’ boys, chicken and waffles with Cajun honey, tasso eggs benedict, bananas foster french toast- yum!
